Elisha’s Dumpling Recipe:

Traditional Pork Filling (5 servings):

Ground pork: 2 lbs
Chinese Chives: 1 bunch
Egg: 1
Cooking Wine: 2 tbsp
Garlic: 3 cloves
Ginger: minced, 1 tbsp
Green onions: 1 tbsp Salt: a pinch
Soy sauce: 11⁄2 tbsp sesame oil: 1 tbsp
Dumpling wrappers: 50

  1. In a big bowl, add ground pork, minced green onion, ginger and garlic, stir and slowly add in water. Mix thoroughly until nicely combined.
  2. Add cooking wine and eggs, stir until combined.
  3. Add soy sauce, salt, black pepper, and sesame oil.
  4. Cut Chinese chives into very small pieces, add them into the porkfilling.

Vegetarian Filling (5 servings):

Chinese Chives: 1 bunch Egg: 4
Shiitake Mushrooms(soaked): 1⁄2 cup
Black Fungus(soaked): 1⁄2 cup
Garlic: 3 cloves Ginger: minced, 1 tbsp
Green onions: 1 tbsp Salt: a pinch
Soy sauce: 11⁄2 tbsp sesame oil: 1 tbsp
Dumpling wrappers: 50

  1. Beat and then stir fry eggs, finely chopped and set it aside
  2. Finely chop Chinese chives, shitake mushroom and black fungus.
  3. Put 1 and 2 into a big bowl, stir well and add salt, soy sauce, black pepper and sesame oil.

Making Dumplings:

  1. Put about 1 tablespoon of the filling in the middle. Wet the edges of the wrapper with a little water and crimp together, forming small folds to seal the dumpling. Repeat with remaining dumpling wrappers and filling.
  1. Put a pot of water on medium heat, put in dumplings once the water is boiling.
  1. Dumplings are cooked 1-2 minutes after they float to the top.
  2. Traditionally served with dark vinegar.
